1/2 cucumber, peeled, seeded, and roughly chopped
1/3 C chopped cilantro
1 t grated ginger
2 t minced garlic
1 C plain yogurt
2 T fresh lime juice
salt and pepper to taste
Combine cucumber, cilantro, ginger and garlic in food processor. Pulse to combine well. Add yogurt and pulse until smooth. Season to taste with salt and pepper.
